Amazing Peanut Butter Chocolate Cupcakes!!!


Cake:

2 C. sugar
1¾ C. flour
¾ C cocoa
1½ tsp. baking powder
1½ tsp. baking soda
1 tsp. salt
2 eggs
1 C. milk
½ C. vegetable oil
2 tsp. vanilla extract
1 C. boiling water

~Heat oven to 350`. Grease and flour 9x13 pan, or makes 24 cupcakes. Combine dry ingredients in a large bowl; add eggs, milk, oil, and vanilla. Beat on medium speed for 2 minutes, stir in boiling water (batter will be really runny) pour into pan. Bake for 30-35 minutes. Cool for 10 minutes, then frost.


Frosting:

¾ C. peanut butter
½ C. butter
3 C. powdered sugar
1 tbsp. vanilla
½ C. heavy cream


~ Cream butter and peanut butter, add powdered sugar and vanilla, beat until there are no more lumps, slowly add cream, and beat for 2 minutes.

Snickerdoodles


1 1/2 C. sugar
1/2 C. margarine or butter, softened
1/2 C. shortening
2 eggs
2 3/4 C. all purpose flour
¼ tsp salt
2 tsp cream of tarter
1 tsp baking soda

Coating:
2 tbsp sugar
2 tbsp cinnamon

Heat oven to 400`. Mix sugar, margarine, shortening, and eggs. Then mix in flour, cream of tartar, baking soda and salt. Shape dough by rounded tablespoonfuls into balls or use cookie scoop. Mix sugar and cinnamon. Roll balls into coating. Place about 2 inches apart on ungreased cookie sheet. Bake 8-10 minutes. Immediately remove from cookie sheet.

Cowboy Caviar


15 oz. can of black-eyed peas (drained)
2 C. thawed frozen white corn
2 avocadoes chopped (add just before serving)
2 C. chopped tomatoes
2/3 C. chopped green onions
½ C. chopped cilantro
¼ C. red wine vinegar
¼ C. olive oil
2 cloves garlic (pressed)
1 tsp. cumin
1 tsp. salt

Stir all ingredients (except avocadoes) in a large bowl. Add avocadoes just before serving. Eat with tortilla chips………… YUM!

Homemade Chocolate, Peanut Butter, Oreo Blizzard!!!

3 scoops of chocolate ice cream
2 to 3 tbsp of peanut butter
3 Oreo's (crushed)

mix or blend ingredients together(but not to much cause you still want the crunch of the oreo's). Enjoy. It is so GOOD!!!

Yummy Banana Bars

1 ¼ C. sugar
1 C. sour cream
½ C. butter
2 eggs
2 tsp. vanilla
3 ripe bananas, mashed
2 C. flour
1 tsp. salt
1 tsp. baking soda
½ C. chopped nuts (optional)

Combine sugar, sour cream, butter and eggs; beat 1 minute. Add vanilla and bananas. Add dry ingredient; beat 1 minute. Stir in nuts. Spread in greased 9x13 pan; bake at 350` for 30 to 35 minutes. Cool; frost with cream cheese frosting.

-Cream Cheese Frosting:

2 tbsp. margarine or butter, soft
4 oz. cream cheese, soft
2 C. powdered sugar
2 tsp. vanilla

Combine ingredients and blend well. Thin with milk if necessary.

Pannukakku (Finnish oven baked pancake)

3 eggs
4 tbsp. sugar
1 C. flour
1/4 tsp. salt
2 C. milk
2 tsp. vanilla
1 tsp. cinnamon

Beat all ingredients very well! Heat oven to 400`. Put 1/4 C. margarine in pan. Put into oven to melt, pour beated ingredients into 9x13 pan. Bake 15 to 20 mintues.

Peanut Butter Chocolate Chip Cookies

2/3 C. peanut butter
½ C. butter flavored Crisco
1 ½ C. sugar
2 eggs
2 tbsp. milk
1 tsp. vanilla
2 ½ C. flour
1 tsp. baking soda
½ tsp. salt
¾ C. M&Ms or 6 oz. chocolate chips

Beat peanut butter, Crisco, and sugar together then add eggs, milk and vanilla. Stir in the remaining ingredients and place on ungreased cookie sheet. Bake at 375` for 11-13 minutes.
